It doesn’t get easier or more delicious than Sticky Toffee Pudding with Butterscotch sauce. It’s irresistibly fluffy, gooey-gooey butterscotchy and has has a mild yet impressionable dates flavor. It Checks all the right boxes to a wonderfully delicious mouth-watering treat
A word of caution, this dessert is way too good – You’ll want to either double the recipe or make it again after the first batch gets chowed down quickly. Although I baked mine in a cake pan, you can make it in a muffin tin or individual pudding molds
Ingredients
250g Pitted Dates
1.25 cups All Purpose Flour
1/4 cup Brown Sugar
1 cup Boiling water
2 Eggs
1 tsp Baking Soda
1.5 tsp Baking Powder

ButterScotch Sauce
1.25 cups Brown Sugar
5 tbsp Butter
1.5 cup Heavy Cream
1/2 tsp vanilla extract
Instructions
Preheat the oven to 350℉.
Mix the chopped dates and baking soda in a bowl. Pour over the boiling water and Stand 10 minutes, then mash well with a masher.
In a large bowl mix together your flour, baking powder, butter, sugar. Next, mix in your dates. Beat until combined
Line your cake pan with parchment paper, pour the batter and spread evenly. Bake for 35 minutes or until a toothpick inserted comes out clean.
In a saucepan melt butter over moderate heat and add brown sugar. Bring mixture to a boil stirring occasionally, and then stir in the heavy cream and vanilla extract. Simmer sauce, until thickened slightly, about 2 minutes.
Place a scoop of vanilla/chocolate ice-cream and drizzle the sauce on top, and serve warm.

CAN I FREEZE A PUDDING?
You can freeze the pudding (before saucing) – just wrap in non-stick baking paper and freeze in an airtight container. Simply reheat when read to serve.
Tips
For a coffee sticky date pudding, add 1 tbsp of instant coffee granules in with the dates.
As soon as the pudding comes out of the oven, poke lots of holes, and then pour over some hot butterscotch sauce.This makes the pudding intensely moist
