Coconut Pineapple Bars

These bars are absolutely one of my husband’s new favorites. We both love pineapple and coconut and this is a quick, easy, and delicious recipe incorporating both of these magical flavors. 

These make the perfect home-baked treat with a tropical twist!

Ingredients:

1 cup all-purpose flour 

1 cup unsweetened coconut

1/2 cup sugar 

1 teaspoon baking powder 

1 teaspoon baking soda 

1/2 cup melted butter 

Topping-Ingredients: 

1.5 cup freshly crushed pineapple 

3 tablespoons sugar

2 tablespoon cornflour 

Instruction:

Preheat your oven to 375 degrees F

In a large bowl mix together your flour, coconut, sugar, baking soda, and baking powder. Mix in your melted butter and stir together gently until incorporating. When done, this mixture resembles coarse crumbs. Save about 1/4 cup of the mixture for sprinkling on top.

Line your 9×9 baking tray with parchment paper,  add the crust mixture, and spread evenly. Bake for 10 minutes.

Mix together the crushed pineapple, sugar, cornflour in a saucepan. Cook over medium heat stirring often for about 5-8minutes until the mixture has thickened.

 Pour the filling over the crust and spread evenly. Sprinkle the saved dough mixture over the filling.

Can I Use Canned Pineapple Instead of Fresh? 

I used fresh pineapple in this easy pineapple recipe, but sure you can use canned or frozen, although I haven’t tried.

Can I Double This Recipe? 

Yes, you can double this coconut pineapple dessert recipe and baking it off in a 9×13-inch baking dish. 

Tips for Making Coconut Pineapple Bars

Using crushed pineapples will allow it to incorporate better into the filling .  You can also substitute with pineapple chunks.

Mix the cornflour with the sugar before adding the pineapple so it blends easily without worrying about clumping. 

You can freeze these coconut-pineapple bars for later, although you might have trouble with having any leftovers!
